Title: Barbecued Haloumi Cheese with Watermelon Salad

Ingredients for 6 as a graze dish or starter:
- 1 pack Cypriot Halloumi (250 grams)
- Salad oil
The watermelon salad:
- 11/2 cups watermelon, deseeded and cut into 1.5cm cubes
- 1 lemon, cut in half ready to juice
- 1 Small pickling onion, peeled and finely sliced
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh herbs, I used mint and dill (kitchen note get oregano, dill, mint and parsley)
- Freshly ground black pepper
- Optional: some red pepper or chilli flakes
To serve: Pita breads
Method:
- Pre-heat your barbecue to high
- Using a large bowl, combine the watermelon, the juice from ½ the lemon & onion slices
- Slice the Halloumi cheese into 5-6mm thick slices, brush with salad oil.
- Warm pita breads on the barbecue, remove, cut into wedges and keep warm
- Place halloumi onto oiled hotplate, cook for approximately 1-11/2 minutes until golden brown on one side, flip over and cook for a further 11/2 minutes
- Place watermelon onto serving plate, top with grilled haloumi, drizzle with the juice from half a lemon and sprinkle with herbs, black pepper and chilli flakes if you are using them
- Serve immediately with warm pita bread.
