When it comes to extra produce, snap freezing veggies keeps the goodness in them, and drying fruit makes a lot of sense, but pickling is a big trend, and it’s so easy to do.
They are not all perfect in shape or size and that makes them brilliant to pickle.
Simply bring them indoors, and wash them. Slice them finely or into lengths, depending how you like to much on them later.
Ingredients:
- Add a cup of water.
- ¼ cup of white vinegar in a bowl.
- Add apple cider vinegar or wine vinegar.
- 2 tablespoons of salt.
- 2 tablespoons of brown sugar. (you can leave out the sugar if you prefer a bring flavor)
- Mix until salt and sugar have dissolved.
Method:
- Put your sliced vegetables into sterilized jars.
- Add layers of peppercorns and dill.
- Load the jar to the top.
- Fill to the top of the jar with your pickle solution.
