Recipe

Ingredients (for 4 people)

8x2cm Thick Lamb cutlets (cap off)
16 x thin sliced Italian pancetta (no rind)
8x1 cm cubes of feta cheese
2xchopped cloves of garlic
1xteaspoon of oregano flakes
A splash of Australian olive oil
100ml of Anchor Margaret River Cabernet Shiraz Red Wine Vinegar

 

Method

  • Put a pocket into each chop and stuff with a cube of feta cheese. Then wrap 2 slices of pancetta around each chop tightly to hold the feta.
  • Cook on a BBQ in a frying pan for 2 minutes each side. 3 minutes for medium rare and 3 minutes for well done.
  • Fry garlic, oregano and add a splash of olive oil and red wine vinegar.
  • Finish with the lid on top to steam the sauce.
  • Serve immediately with salad and/on a bed of mashed potatoes dressed with the pan juices.
