One of India’s most celebrated dishes is ‘Tandoori Chicken.’ Our celebrity butcher Vince Gareffa has a method of preparing this dish that we can all achieve at home.
Vincenzo’s Tandoori Chicken:

Ingredients;
- 12x Chicken Lovely Legs (skinless drumsticks).
Ingredients for Tandoori Marinade Mix:
- 60mL Lemon juice.
- 50mL West Australian Extra Virgin Olive Oil (EVOO).
- 2 x Tbsp Tumeric.
- 2 x Tbsp Paprika.
- 1 x Tbsp Curry Powder.
- 2 x Tbsp Ginger Chopped.
- 2 x Tbsp Garlic Chopped.
- 1 Teaspoon Chili Powder.
- 2 Teaspoon Cardamom Powder.
- 2 x Teaspoon West Australian Organic Lake Salt.
- 500mL Mundella Yoghurt.
Method
Thoroughly mix all your Tandoori ingredients in a bowl, then add the chicken, making sure it is thoroughly covered in marinade and refrigerate for 12 to 24 hours.
Next Day, remove chicken legs from marinade and bake chicken legs in oven on a rack for 30 – 40 minutes at 175°C basting occasionally with the leftover Tandoori marinade.
Ingredients for Yoghurt Dressing For Basmati Rice
- 500mL Yoghurt.
- 2 Tbsp x Pine nuts.
- 1 x Large Teaspoon Sumac.
- 2 Tbsp x Butter.
- 1 Tbsp West Australian Extra Virgin Olive Oil (EVOO).
- 1 Handful of Fresh Thai Mint Basil.
- 2 x cups Cooked Basmati Rice.
Method:
Put hot basmati rice on a platter and cover it with your yoghurt. Separately fry the pine nuts in the butter, oil and sumac for just a minute, then pour pine nuts and spread sumac sauce over the yoghurt then place cooked chicken on top, garnish with your mint basil.
