Trevor travels to Thailand where he tries his hand at making the deliciously famous Thai Curry Chicken Noodle dish, Kaow Soi Gai.
Recipe: Kaow Soi Gai (Curry Chicken Noodle)

Method:
- Fry crispy egg noodle for garnish
- Heat the wok with ? litre of vegetable oil.
- Deep fry egg noodle. Set aside.
- Blanch egg noodle for the curry
- Blanch egg noodles in boiling water and place in soup bowl.
- Cook ?Kaow Soi Gai Curry?
- Heat the wok. Add half ladle of coconut milk.
- Follow with red curry paste, Hung Lay curry powder and yellow curry powder.
- Stir until all curry paste is mixed well with coconut milk.
- Then pour the rest of the coconut milk into a wok.
- Add chicken. Bring to boil then put in chicken stock.
- Season with fish sauce and sugar. Boil until chicken is cooked.
- How to serve
- For topping on blanch egg noodle, slice Thai coriander.
- For condiments, slice shallot, pickled cabbage and lime. Add the chili oil (see below how to prepare chili oil). Put in small dish.
- When ready to serve, pour the ?Kaow Soi Gai Curry? on blanch egg noodles.
- Garnish with crispy egg noodle and sliced spring onion.

Method:
- Fry crispy egg noodle for garnish

- Deep fry egg noodle. Set aside.
- Blanch egg noodle for the curry
- Blanch egg noodles in boiling water and place in soup bowl.
- Cook ?Kaow Soi Gai Curry?

- Stir until all curry paste is mixed well with coconut milk.
- Then pour the rest of the coconut milk into a wok.
- Add chicken. Bring to boil then put in chicken stock.
- Season with fish sauce and sugar. Boil until chicken is cooked.
- How to serve
- For topping on blanch egg noodle, slice Thai coriander.
- For condiments, slice shallot, pickled cabbage and lime. Add the chili oil (see below how to prepare chili oil). Put in small dish.
