Neville takes a leaf from the Ballymaloe Cookery School in Southern Ireland using leaves from just about everything that is growing in his veggie patch. There is rocket, broad bean shoots, spring onion leaves, flowers from pak choy, beetroot, coriander, parsley and last, but not least, some snow peas.
In the kitchen, Neville uses the fresh ingredients to make a Bean Salad using cooked beans out of the can, lake salt, vintage cheddar cheese, red onion chopped up finely and chunks of avocado.
Cut up the veggies and greens from the garden and put them in the bowl. They are so fresh you can almost hear them talking. Dress it with some extra virgin olive oil and some red wine vinegar, give it a bit of a stir and have a bit of a taste! Beautiful!
To bring some greens and herbs close to the kitchen a great idea to plant them in pots that can be placed right next to the kitchen door.
