Malabar spinach is a fast-growing vine with semi-succulent leaves that have a mild flavour.
- Malabar spinach comes in both red and green leaf forms.
- These plants have high levels of mucilage in the foliage, which translates to softer, more supple skin and improved joint health.
- Malabar spinach is rich in soluble dietary fibre, which can improve digestion, aid weight loss, control blood sugar levels and lower cholesterol.
- It contains magnesium, potassium, zinc and iron. These minerals can help improve sleep and bone health and lower the risk of anaemia.
- This spinach is high in vitamin C and A, which help to prevent sickness and improve your body’s immune response.
- It’s is easy to grow, particularly in the summer. Plant it in full sun with 30cm between plants and water it regularly.
- Young leaves and shoots can be eaten raw in salads. Leaves, shoots and aerial tubers can be steamed or cooked in curries, soups, quiches or stir-fries.
